I love to watch cooking shows on TV. I watch Extra Virgin on the cooking channel, not to be confused with Food Network. It is the actress from Goodfellas and her husband that now live in Italy in Tuscany. He is Italian and they cook rustic Italian food with fresh ingredients. The other night the episode was an olive oil cake. He made it with berries, but I only had apples, so it was an olive oil apple cake.
I love desserts in the summer, but not ones that will add to my hips and thighs and make you feel weighted down. So i decided to try this with my own spin and it came out so light and fantastic.
Olive Oil Apple Cake
1/2 cup olive oil
4-5 sliced apples
1/2 cup of apple juice or apple cider
2 eggs
2 cups of flour
cinnamon
1/4 cup of white sugar
1/4 cup of brown sugar
Peel and slice all apples. Start by taking a round pan and placing it on the stove burner. Pour in the brown sugar and a splash of olive oil. Turn the flame on medium and start stirring until the brown sugar melts then remove. Then lay down the apples in a circular pattern going in, then sprinkle with cinnamon and repeat until the apples are gone. Now in a separate bowl, mix the white sugar, olive oil, and eggs; then add in the cinnamon and apple cider/juice. Now add in the flower and once blended, pour ontop of your apples. Bake on 350 for about 30 min. Once cooled, take a plate and place on top of the pan and flip it, then gently pound on top of the pan and the cake will come out. You will find a beautiful cake that is light and easy on the eyes.
