Brownies, cake, cookies, and more. Who doesn't like dessert, this house does for sure! Some nights it is already a process to make a 12 course meal. Most meals in my house do not come out plain, there is always a side or other elaborate things to go along with it.
Hubby has a sweet tooth and loves his desserts. He has to work overnights once a month and loves when his wife packs him some dessert to get him through the night. Yesterday was Sunday, so the sauce is simmering on the stove most of the afternoon and in between giving the kids baths and folding laundry and cleaning, hubby is fast asleep. Before he went to bed for the afternoon, he said "you know, if you want feel free to make me something sweet". I was pretty sure I was sweet but I guess not. I am a Gemini so there is that rotten side.
So I throw the pasta in and start looking for the perfect recipe to make him for dessert. I am short on butter so there goes the idea of cookies. What else can I make from scratch? I don't have any fresh fruit to make any concoctions, but then a light bulb goes off! He loves Nutella so let's make pockets! What are pockets you ask? They are like little mini folded ravioli filled with yummy goodness!
So I whip up some pizza dough and then let it rest and rise. I ended up using Nutella, PB, and Strawberry Jam because little did I know hubby had attacked the jar of Nutella and there was not much left! Here are the steps for how to make this:
POCKETS
1 Pizza Dough
Fillings (Nutella, Jam, PB, chocolate chips, etc)
Flour
1 egg

Having little hands makes the dessert sweeter! Then take a round lid, or something circular and press down on the dough, starting on the edges and working your way inward. I used the lid from my water cup.
Then get a knife and gently cut the circles out and tear away the extra dough. Flour another section of the area where you can lay the circles without them sticking. Then take your filling(s) whatever it may be and put a scoop just back from the outside of the circle. Then fold over the half of the circle and you can either take water and seal the edges or I take a fork that has been floured and gently press down. Last mix up an egg and brush the tops with an egg wash (I never did this last night so they do not look nice and golden). Lay them on a greased sheet and pop into the oven on 350 for about 25 min. Once they are ready, remove from the oven and sprinkle some powdered sugar.
These are delightful and crunchy without having to fry them. The look like cute mini half pies that everyone in the family will enjoy!
