Lent has started as of this past Wednesday. So therefore Friday's will become meat free in our house. So that could be pizza Friday nights or something different every Friday until Easter. I try to change up every meal so that it does not get repetitious. I did not have alot of veggies in the house and pasta was like almost every night this week so that was not an option. I really did not want sauce either but that did end up happening. Sauce is just normal in this house. Once, twice, five times a week. Ok maybe that is a little extreme but at least twice.
Calzone is pretty much an inside out pizza so as far as your "toppings" they will be the same. For lent there will obviously be no pepperoni or sausage. For dinner I just did the normal cheese and sauce. My kids don't eat green peppers or I could have added that or made a breakfast one, or maybe a tortellini alfredo, mac and cheese....ok you get the idea!
So this is how you do it.....
CALZONE
Pizza Dough
Sauce
Cheese
2 eggs
Flour
Start by making your dough or your store bought one (you will find this in my recipe section). Spread some flour out on the counter and then rip off little pieces of dough and roll out to a width that you will be able to fold over. Take your sauce and spread it on the bottom half and add all the other fixings. Now take the top of the dough and fold it over and take a fork that has flour on it and fork the ends to close the calzone. Now mix up the eggs and brush it on top of the calzone to give it an egg bath. Then GENTLY cut some slits in the top of poke a few holes to let the air escape. Then spray a cookie pan and place it on there and then bake it on 400 for about 15-20 min until golden brown.

Now for dessert I would leave a little extra pizza dough and make sfingi. Well I know fried food is not good and most of the time does not agree with my stomach so I tried them baked!
BAKED SFINGI
Pizza Dough
Cinnamon/Sugar mixture
olive oil
Take the last piece of dough and pull off small bits of dough and roll them into balls. Then pour some olive oil into a dish and make a cinnamon/sugar mixture in another dish. Then take the balls roll them into the oil then into the sugar mixture and then place on a greased pan and bake on 350 for about 15 minutes.
