Here comes another recipe to add to your waistline. Sorry I am not weight watchers, I am taste watchers! Like I said before, its winter and bitter cold, so what else is there to do? EAT. I work out by stirring and running back and forth grabbing ingredients.
This recipe will remind you of summer days going to the fair. Did you want that elephant ear, fried dough, funnel cake, sugar waffle, or something else that has a close name? Well this recipe you can make at home and enjoy the same flavors of summer. In Italy they are called sfingi or in America people call them zeppole. Many people from NYC and NJ can remember a food truck coming through their town serving them nice and hot. While some people put ricotta in theirs, I make mine with just dough as my daughter and I cannot have dairy.
You can make your own dough or buy it. I choose to make my own. The crunchy, sweet bite of these are so utterly amazing and addicting all at the same time.
Sfingi
1 cup of warm water
1 packet of dry yeast
4 cups of flour (leave an extra cup out)
a sprinkle of sugar
a sprinkle of salt
a splash of olive oil
1/2 pan of vegetable oil
Start with dumping the water into a big bowl, then add the yeast. Let it sit for 5-8 min and then add the sugar and salt. Mix and add the olive oil. Then start adding the flour and knead with your hands. Then add the extra cup of flour to work into the dough if it is still sticky. Create a ball of dough and then cover and let it rise. This may take 2-4 hrs. Once the dough has risen, heat up a pan of hot oil or use a deep fryer and drop small balls of dough and then once they start turning golden take them out and drop into a bowl of sugar and then put on a plate with paper towel. Then enjoy the crunchy sweetness!
