Most of the time the way to a man's heart is through food. Well this stands true with my husband. In our house, some dishes are only made on special occasions such as holidays, birthdays, or other celebrations. Joey always likes having dinner being changed up instead of the same old boring thing.
I had to run out to get my son's prescription as my little man is dealing with croup. Well what better way to figure out dinner than going to a grocery store. I knew I had ground beef to use at home and some broccoli that was starting to go bad. What is something different that we have not had in awhile that I can combine those ingredients? STUFFED SHELLS! So pick up Giuseppe's script and then grab some large jumbo shells and ricotta
I get home and realize I have bacon too...what guy doesn't like bacon right?! Perfect! So in our house it is two kinds of stuffed shells type of night. One dish of meat and sauce and the other ricotta/broccoli/bacon stuffed shells. First major step is to cook the shells al dente and when they are done drain them.
Ricotta/Broccoli/Bacon Stuffed Shells
1 bag of mozzarella (split with the meat shells)
1/2 cup of Parmesan cheese
1 (8oz) small container of Ricotta cheese (use a bigger one if you are going to make a big batch)
1 medium size head of broccoli
4-5 pieces of bacon
1 egg
1 box of large shells
1 jar of sauce (split with the meat shells)
Italian seasoning

Start by putting frying up the bacon and blanching the broccoli. Remove when done and finely chop them. Dump the container of ricotta into a bowl and then add in the Parmesan cheese, bacon, broccoli, and a mixed egg. Stir together and then add the seasonings. Get a large pan and put a thin layer of sauce on the bottom and then fill a shell and place in the pan. When you have completely filled up the pan, put a thin drizzle of sauce across the top of them and then sprinkle mozzarella on top. Cover with foil and bake for 20 min at 350.

1 jar of sauce (from above)
1 package of mozzarella (from above)
Start by prepping your sauce. When it is ready put a thin layer of sauce in a large 2nd pan. Start browning the meat, drain, and add to the sauce. Fill each shell and then place in the pan. Drizzle the rest of the sauce across the top and then add the mozzarella cheese. Cover and put into the oven next to the ones above.
If these don't please your taste palate, I don't know what will!!
