This winter in Rochester has been VERY cold and frigid. Most days it is in the teens and at night anywhere from 4 to below 0. It is hard to keep the house warm without bumping up the heat to 76! We keep our heat lately at 70. I knew I was going to make pork chops for dinner and said what else can I make for the sides? I open the fridge and look around, and then realize I have apples. PERFECT!!! Let's cook up some fresh applesauce, something my grandmother used to make all the time. Winter was a time where she would bake and cook all kinds of goodness. She used to make things in masses and then just stockpile the freezer. The margarine container or a cool whip container would serve as Tupperware and labeled so we knew what it was.
Fresh applesauce is so easy to make that I will now share it with you. I prefer to use macintosh/20 ouncers but you can use any apple.
FRESH APPLESAUCE
5-6 apples
1/4 cup of apple juice of apple cider
1/2 cup of brown sugar
2 tsp of cinnamon
Start by peeling, slicing, and dicing up all the apples. Add to a pot and pour in the cider or the apple juice. Add in the sugar and spices. Cook on a medium flame and stir every so often. It should cook down enough in about 1/2 an hour. If it does not, throw it in a food mill and grind it down. If you want to make more, double the recipe and freeze the rest.

For dinner I just soaked the porkchops in a ranch dip packet mixed with water bc we cannot have milk. Then I breaded it and put it in the oven. By soaking it, it made the porkchops so moist! I also made a chicken/butter/herb rice that tasted great!
