My mothers side is Italian and hail from Messina, Sicily with the last name of Trimboli. My husband is also Sicilian and Calabrese. My Father In Law is from Alia, Sicily which is 2 hours east of Palermo. We still have family over there and I have learned some recipes that come from the old country. We were there in 2009 to visit our family and I fell in love. The simplicity and laid back way of life vs those of the USA. The freshness and the taste of the food was beyond words. Going outside to pick fresh fruit off of a tree or bush. Italians are known for not wasting anything when it comes to food and I mean anything. This recipe is a traditional Sicilian dish that is loved by so many and comes from the old country.
This dish is normally made during the holidays or special occasions. My husband loves them so much that I made them for dinner tonight. Hey if its fried it has taste good right?
Cardone
Batter
4-5 eggs
1 cup of Parmesan cheese
1 cup of flour
Vegetable Oil
You need to either buy the cardone or pick them, then clean them and then boil them. If you are cleaning them you need to wear plastic gloves because they will turn your hands purple. Once you have boiled and let them cool off, whip up the batter. Put oil in a frying pan and once it is hot enough, dip a cardone one by one in the batter and then put into the hot oil and cook until golden brown. Then have a plate with paper towel to lay them on after they are done cooking to soak up the oil.
If you don't like your greens after this, you may need to be evaluated...kidding, but they are Giuseppe approved!
