Dinners in our house are always cooked by me, the mom of the house. My husband works 2 jobs, so it is up to me to make sure everyone's taste buds are pleased. Some nights not only do I have to make sides with the main course, but I need to make 2 versions of the main course. As many of you mom's already probably know, these toddlers love to say "yuck" and
"I'm not eating that!". Chicken is the main course of the night, so how can I make it that the kids will eat it? Kids love sweets right? Then let's make a sweet chicken for the kids and a balsamic chicken for the adults. The following is the recipe for Hawaiian chicken, Balsamic chicken, and Sicilian potatoes.
Hawaiian Chicken
Cubed Chicken
diced fresh pineapple (you can use canned as well)
brown sugar
1/2 orange
Spray a frying pan and add in the chopped pineapple. Squeeze the juice slightly out of the pineapple as you add it into the pan. Add in the cubed chicken and start sauteing it. Then squeeze in the orange and cook on medium heat. The final stage is to sprinkle a handful of brown sugar and continue cooking until it forms a glaze.

2 crushed cloves of garlic
cubed chicken
salt & pepper
Balsamic Vinegar
Splash of olive oil
Start with putting a splash of olive oil in a frying pan and add the 2 crushed cloves of garlic. Saute the garlic until it turns a light brown then add in the cubed chicken. Sprinkle with salt and pepper. As the chicken turns whitish swirl in from the center out with the balsamic vinegar. Cook on medium heat until it forms a glaze or the chicken starts browning.

8 Potatoes
1/2 onion sliced in strips
pinch of salt
olive oil
vinegar
oregano
Peel and cut up the potato's into cubed pieces. Add to boiling water. Slice up an onion in long pieces and add to boiling water. When the potatoes are done, drain and keep the onions with the potatoes. Throw into a bowl hot and add a splash of olive oil and vinegar ( I use apple cider vinegar), and oregano.
