My son Giuseppe is 2. What does he always ask mom to make, "uhkees" aka cookies. What toddler does not like cookies? They taste better when Mom makes them...from Scratch. My daughter Milana calls them Snowflake cookies, but in Italian we call them Pizzelles.
You recognize these infamous Italian cookies by their shape and their print. Some old school Italian ladies have passed down their cast iron pizzelle makers or still use them to this day. You can also find them at your good old Italian store or online. We have an Italian store that we frequent here in Rochester, NY called Olindo's. My husband has been a customer since he was a small boy shopping with his parents. We now continue those memories with our children. For my birthday, my husband Giuseppe went to Olindo's and bought me a Pizzelle maker. My kids now promptly thank him!
I use this recipe seen below, minus one small eansy meansy change. I have followed this recipe and the pizzelles kept coming out a little doughy/chewy. So in this case I follow the recipe down to only using 2 eggs and extra vanilla. I also let the mixture sit for 5 minutes after everything is blended. This last batch that i made, i used the 2 eggs vs the 3 eggs and they came out crunchy and perfect!

2 eggs
1/4 cup of sugar
1/2 cup of butter/margarine melted and cooled
2 tsp of baking powder
3 tsp of vanilla
1 3/4 cup of flour
Once you take off of the pizzelle maker, sprinkle with powdered sugar.
