Last Monday was my father in laws 60th birthday, so we had them over for dinner and cake. Like I have said before, Italians are big on family. The best way to celebrate his birthday is to make them some homemade pizza, garlic knots, and bruschetta. These recipes can be found under the tabs above.
The pizza came out great, as usual, sorry I make a mean pizza and I know it. This was my mother in laws first time having garlic knots. I am from downstate NY where we have garlic knots with our pizza, not chicken wings. I make my own dough and toppings. She loved it all and was very impressed, which is a HUGE compliment to me coming from a true Italian woman.
We then cleaned up after dinner and served the cake. This post is more about the frosting than the cake itself. I saw this on The Talk on tv and again just went with my own recipe. I made a white box cake in two round pans and sliced up some strawberries to go in the middle.
Real Fruit Frosting
1 cup of fruit ( I used strawberries)
2 cups of powdered sugar
2 sticks of butter
splash of vanilla
splash of lemon juice
Start by putting the fresh fruit in a blender and blending it up. Then start mixing the butter in a bowl and add the vanilla, and then the strawberry puree and the lemon juice, then slowly add in the powdered sugar until it is creamed and let it sit aside. I made a mistake and only used 1 stick of butter so it came out very runny. Put down the 1st round cake and then put the sliced strawberries down and then the top cake and then frost the cake. You can then take chocolate and grate it to make chocolate shavings for the top.
This frosting tastes AMAZING and with the white cake and strawberries, if you closed your eyes, you would have swore it was angel food cake with strawberries. I will DEF be making this again!!
