The past week was beautiful and I was able to grill outside and give the meat the taste I love. But does grilled chicken get boring for you? Then make it A-M-A-Z-I-N-G!
How you ask? Switch up the flavors, make a new dish! Sunday as you know in our house, is normally pasta night. It does not have to be pasta with red sauce. It was so nice out that i decided to make a cold pasta dish and add the grilled chicken to it. Here is how to make your dinner unboring.
First, clean the chicken and slice it to your liking. I prefer think chicken so i slice the breasts in half and cut out all the veins and yuck. Then stab a few small holes in it with the knife so that the marinade can seep in and make it flavorful. Now throw it in a ziplock bag and pour in some olive oil, apple cider vinegar, salt, pepper, garlic powder, a splash of OJ, a splash of pineapple juice, oregano, and some diced garlic. Take the bag and gently shake it and massage the chicken with the flavors, and then put in the fridge overnight.
The next night, boil some pasta leaving it al dente and then strain and throw in the fridge. My kids love broccoli, so I made them that while I diced up some Roma tomatoes for my dish. Take the chicken out and throw it on the grill, once it is done, bring it back in and chop it into pieces. Take a small frying pan and add a splash of olive oil, a little garlic powder, and 1/4 cup of butter and let it sautee for a few minutes on med/low. Take the cold pasta back out and put into a bowl, add the veggies and the chopped marinated chicken, and then top with a splash of the frying pan mixture. It is light, refreshing, and oh so summery, all while making dinner unboring!
