I am always looking for recipes that give more natural ingredients vs things I can only imagine what is in it, per what I was told in childhood. Jello? I grew up with the adults telling us it was made out of hooves. GROSS. So I found this recipe on http://www.tarasmulticulturaltable.com/gelo-di-melone-sicilian-watermelon-pudding/. I said hey let's give it a try, I am always up for something new. I followed the instructions minus the cornstarch and the cinnamon, as I did not have cornstarch in my pantry. I used flour to thicken it up and maybe that is why it came out with a little more of a funky texture. The taste of the pureed watermelon definitely came thru!
GELO Di MELONE
Ingredients
2 cups + 5 teaspoons (500 ml) pureed watermelon, strained
1/4 cup (40 g) cornstarch
3/4 heaping cup (165 g) sugar
1 teaspoon vanilla extract
1/4 stick cinnamon
Garnish:
Ground cinnamon
Chocolate chips
Ground pistachios
In a small bowl, slowly mix in a little pureed watermelon into the cornstarch until dissolved.
In a small saucepan, mix together watermelon puree, dissolved cornstarch, sugar, vanilla extract, and cinnamon stick. Bring the mixture to a boil and reduce heat to low. Simmer, stirring constantly, until thickened, 10-15 minutes.
Rinse 2 large or 4 small ramekins with water. Do not dry. Pour the thickened watermelon into the wet ramekins and refrigerate overnight.
Serve chilled in the ramekins or unmold them. Sprinkle with ground cinnamon, chocolate chips, and pistachios.
I literally cut up fresh watermelon, threw it in the food processor, and then put it thru a colander to get all the natural juice. This is how it came out.
