My daughter's birthday is in August. Her preschool was ending last week and she was able to celebrate her birthday with her class since she was a summer baby. She always loves everything I cook, so it was not mommy go to the store and get me these, it was please make these. She has been on a kick about unicorns and rainbows lately. What girl isn't crazy about unicorns right?
So, she said "Mommy, please make me rainbow cupcakes"! How could I say no? So off to Pinterest I went to grab ideas on how to do these without them looking like a huge mess. Come on, I need to be the Cool Mom of the Year right? I joke I joke. So after working a long day, I threw on the apron and cooking like crazy started. I also made a rainbow cake for us to have for dessert that night. See that after the following recipe.
RAINBOW CUPCAKES
1 box of white cake mix
food coloring
2 tubs of white frosting
Airhead rainbow candy
Cupcake wrappers
1 star tip
Pipping bag
Start by mixing up the white cake mix. Then separate it into how many colors you want to put in the cupcakes. I think I had 5. Then add the food coloring to the cake mixes and mix. Take the first one and spoon a blob into the cupcake holders. Then keep repeating with the rest of the colors. Bake on 350 for about 30 min.
While they are cooling, do the same thing with the frosting. Separate into how every many colors you want to use. Now get a star tip and insert into a piping bag. Roll the bag down and take a spoon and scoop a color frosting on one side, then do another color next to that, and so on. Then roll up the bag a bit and repeat but do not put the same color on top of the one on the bottom. Fill to the top of the bag.
When the cupcakes are cool, start pipping the frosting on in a swirling motion. Once you are done doing this, cut the Airhead rainbow candy in pieces and shape into a rainbow ontop of the frosting. You are now the Coolest Mom of the Year!

Now I have one more box of white cake mix, so why not make a dessert for after dinner and REALLY earn my title! So I basically do the same as above but put the cake mixes into 4 round pans. Bake on 350 for 30 min and then take out and let them cool. Once cool layer them and then frost! Cut and you have a rainbow cake!
