Spring is trying to make its way here to Rochester. Tonight there is a freeze watch and it is the end of May. I think Mother Nature is drunk! We went to the Rochester Public Market last week and picked up some flowers and I had to get some fresh basil plants to keep in a planter. With the smell of Basil, my stomach starts to growl. So what is for dinner? A Pesto!!!
LEMON PESTO
5-6 Basil leaves
olive oil
lemon juice
garlic cloves
Throw into a food processor and you are done.
Throw some pasta in to boil and when al dente add the lemon pesto to it for amazing flavor. I also had some chicken breasts, so i marinated it in balsamic vinegar, olive oil, salt, pepper, garlic salt, and italian seasoning. I threw it on the grill and let it cook. While it was cooking I made some bruschetta and put that ontop of my grilled balsamic chicken. Flavor was the word of the night!!
