It is SuperBowl Sunday and for most that means Football and Food. Well for us Italians, that means Food then Football. My husband expects a nice spread and that I will cook up. Start with the appetizers all the way to dessert. Today is like a wedding with a 10 course meal. Hubby worked today leaving me to tend to the kids and cook like a chef.
So let's start with the appetizers. Oh wait, I need fresh bread for those. Let's pack up the kids and head off to the bakery. One dozen Italian rolls bagged, paid, and back home. Now let's feed the kids lunch so that I can get started on my menu. Appetizers will be sliced pepperoni, crostini with Bruschetta, and chips and dip. So there you take a loaf of the bread, slice it up into little slices, and throw into the oven on bake for 350. Take them out once they are crunchy and golden. Then dice up tomatoes, onions, and add a splash of olive oil with oregano. Mix them and then add to the crostini.
On to the dinner. The menu will consist of homemade pizza, chicken cutlets, potato croquettes, and homemade sausage and peppers. If that is not enough to fill hubby's belly I don't know what is. The potato croquettes are something that I learned to make when we were in Sicily. Who knew something that we make in america, could be turned into something else that tastes so good. Joe's zia and his cugini made these for me knowing how much I loved potato's. When making chicken cutlet you need to pound it out thin....thick chicken is one of my worst pet peeves!!

The potato croquette is my recipe of the day. It is so easy and yet so tasty, even if it does add a few calories to your waist, live in the moment!

Sicilian Potato Croquettes
5-6 potatoes
2 eggs
Breadcrumbs
Parsley
1 handful of Parmesan cheese
Vegetable or olive oil
Peel and chop up your potatoes. Then put into a pot of boiling water just like when you are making mashed potatoes. Once done drain and then mash. Do not add any butter or milk or any other things to it. Then put into the fridge to chill for an hour or so. Then crack and add 2 eggs, the cheese, and parsley. Then get your frying pan hot with oil. Roll the potatoes into logs, roll in the breadcrumbs, and then into the hot oil. Fry them and then put onto a papertowel when done to soak up the oil. You have now made croquettes and can now experience the taste of Sicily. Do not serve with any condiments or sauce.
